    Did not your broccoli not cook to mush since you cut it into tiny pieces and put it into the pot with the sweet potatoes. It takes more than a minute to cook sweet potatoes where as broccoli will wilt when it senses hot water. Especially when cut into little tiny pieces like that.

    tomato skins add a lot of flavor you can just fish them out of the soup at the end

    Brown rice would be better then white rice. But it looks very good…I wrote the recipe down. Thank you

    why do you cook the broccoli and cauliflower for same length of time as potatoes and carrots?? Why add oil? this could be a healthy fat free soup. If adding oil why not use to saute the onions, celery with fresh garlic? I would use same ingredients, but cook differently. Saute  onions celery garlic,with olive oil, add broth and spices,  bring to boil and cook potatoes and carrots, 15 mins or so depending on size until almost cooked. Then, I would add broccoli and cauliflower- cook 2-3 mins, then add kale and tomatoes, simmer  2-3 mins. I would consider adding tomatoes earlier- not sure why you add last. this way the broccoli, cauliflower and kale should not be overcooked. As another mentioned about reheating and having mushy vegetable, I would keep some broccoli, cauliflower and kale out to add when reheating left overs to prevent overcooked mushy vegetables. I do like the idea of serving over rice 🙂 and will have to try that spice combination!

    I made this again tonight.  I barely cooked it b/c, past experience, it makes a big pot of soup, and then whenever I re-heat to have a portion, then the veggies are mush.  Now, I have a pot of pretty-much raw vegetable soup in the fridge.

    Dang, this inspires me! How could I have forgotten about vegetable soup? I am going to try this with what I have on hand: cauliflower, onions, carrots, spinach, peppers, tofu! Thanks so much for this!
