INGREDIENTS:

  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon green curry paste
  • 1 can (13.5 ounces) coconut milk
  • 1 cup vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 cup broccoli florets
  • 1 cup bell peppers (assorted colors), thinly sliced
  • 1 cup snow peas
  • 1 cup sliced carrots
  • 1 block (14 ounces) firm tofu, cubed
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish
  • Cooked jasmine rice for serving

INSTRUCTIONS

Step 1: Prepare the Rice

  1. Fill a large pot with water and bring it to a boil.
  2. Add the jasmine rice and cook according to the package instructions until tender.
  3. Drain the rice using a colander and set it aside.

Step 2: Sauté the Aromatics

  1. In a large skillet or wok, heat vegetable oil over medium heat.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add green curry paste and cook for another minute, stirring constantly.

Step 3: Make the Curry

  1. Pour in the coconut milk, vegetable broth, soy sauce, and brown sugar into the skillet or wok.
  2. Stir well to combine the ingredients.
  3. Bring the mixture to a simmer and let it cook for 5 minutes, allowing the flavors to meld together.
  4. Add broccoli florets, bell peppers, snow peas, and sliced carrots to the skillet or wok.
  5. Stir in cubed tofu.
  6. Cook for another 5-7 minutes until the vegetables are tender-crisp and the tofu is heated through.
  7. Season with salt and pepper to taste.

Step 4: Garnish and Serve

  1. Transfer the Thai Green Curry to a serving bowl.
  2. Garnish with fresh cilantro leaves for a burst of color and flavor.
