    recipe looked delicious but why do Chinese and restaurants of late add peas to many dishes? I'm 57 and waaaay back when I can remember MUCH BETTER take out (and eat in if desired : ) Seems like many now take shortcuts or really don't give a damn. Your recipes look terrific though. The one thing I wondered was did you simmer/saute the food a bit longer to thicken it? In the video it didn't appear so. My apologies if mistaken.

    I was wondering. What is the difference between light soy sauce and dark soy sauce? And oh, what does rice cooking wine do to the food?

    For some reason, I have never seen fresh peas here in Texas. Frozen peas are sold in the markets. If I try using frozen peas, should I cook them first in their package or will adding them frozen to the dish be enough cooking?
