    Well… as far as I understand it – you need about 1 part of cheese to 3 parts of potatoes, and you make the mashed potatoes any which way you want, and you can basically use any kind of cheese – of course cheese that melts stringy is better than cheese that doesn't like to melt at all – and you don't use much cream in it. The trick is a combination of the melty cheese and potato starch becoming gluey because of the work, a bit like gluten developing, which is the reason why you don't whip mashed potatoes if you want fluffy and light mashed potatoes. So – more work, and you'll get the kind of results you want. (Also, use waxy potatoes.)
    That's what I think.

    If you cut and peel the potatoes before boiling them you loose the starch and therefore it looses texture. Also wrong cheese

    The restaurant uses like 80% cheese and 20% potato in theirs. Having more cheese than potato is the only way to keep the melted cheese texture. The moisture from too much potato ruins the texture.

    I have to confess. The dish from the original video is gross. It's probably just me cuz I HATE milk and whatever has a milky flavour.
