- 1 cup Arborio rice
- 4 cups vegetable broth

- 8 ounces mushrooms (any variety), sliced
- 1/2 cup white wine
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste

INSTRUCTIONS
Step 1: Cook the Mushrooms
- In a large skillet, heat olive oil over medium heat.
- Add chopped onion and minced garlic. Sauté for about 2 minutes until fragrant and translucent.
- Add sliced mushrooms and cook for another 5 minutes until they are tender and browned.
- Remove half of the mushrooms from the skillet and set them aside for later use.
Step 2: Prepare the Risotto
- Add Arborio rice to the skillet with the remaining mushrooms.
- Stir the rice and mushrooms together, allowing the rice to toast for a minute or two.
- Pour in the white wine and stir until it is absorbed by the rice.
Step 3: Cook the Risotto
- Gradually add the vegetable broth to the skillet, one ladleful at a time, stirring constantly until the liquid is absorbed.
- Repeat the process of adding broth and stirring until the rice is cooked al dente. This should take about 20-25 minutes.
- Season with salt and pepper to taste.
Step 4: Finish the Risotto
- Stir in the reserved cooked mushrooms and grated Parmesan cheese.
- Continue stirring until the cheese has melted and the mushrooms are heated through.
- Remove from heat and let the risotto rest for a few minutes to thicken.
