Internal bread temp is 190 degrees (200, if it's an egg bread), if that helps.

I made it today and it actually rose really good! But, it looks burnt on the top and is very hard 🙁 I will have to try it again maybe on a lower temp? Or should I just do a shorter cooking time? I also only let the dough sit overnight before shaping loaves, not 24 hours like you said in the video…(I am also using fresh ground hard white wheat)

I've been researching the Berkey for a while now. Ever since seeing your first video a few months ago. I have a question. Does it keep the water cool? Do you drink your water lukewarm or do you filter it there and then store it in containers in the fridge?

Would mixing the bread in my kitchenmaid stainless steel mixing bowl be an issue? And put it in a glass bowl for rising???

Thank you for this recipe, I am very excited to try it. Do you ever sprout your wheat before grinding? I have seen others on YouTube do that, but not sure if they make bread with it.

I love stainless too but after reading that stainless steel leaches chromium and nickel I am concerned, what are your thoughts?

Hi, thanks for all of your trial & error with a whole wheat sourdough recipe! Question: Do you think I can bake this in my Dutch oven or will it only work in 2 loaf pans?

Can I use store bought wheat flour? I feed my starter with Bobs Red Mill, will that work for this recipe?

Lisa – I had a bread FAIL following this recipe!?!? Not sure what on earth happened — my KitchenAid mixer didn't seem to appreciate all that dough being on high so I had to knead on medium and NOT for 10 minutes. Maybe that is where I went wrong? The dough was really dense and incredibly difficult to even make into a ball with my hands – basically, impossible to manipulate. I have a pic of it if you'd like — the middle is just dense uncooked grossness. I'm SO sad b/c I wasted so much flour!!! 🙁 ANY advice??? Again, I used whole wheat unbleached flour – from fed starter. Thanks in advance!

Hey Lisa – just a few quick questions: 1) do you use your dough hook the entire time? When adding the 1 cup at a time of the total of 6-7 cups of flour? Or, do you start with the paddle and move on to the dough hook? Thanks! I am curious because my dough (I have a KitchenAid mixer) ended up looking pretty dense and separating – it kinda looked like a brain! 😉 It wasn't too stretchy at all. Now, my starter was started a week ago and wasn't SUPER bubbly but I have fed it for once a day for 5 days and twice a day for 3 days. I used organic whole wheat flour. Maybe I used too much flour??? I have it proofing in my porcelain bowl greased with coconut oil now and will check it after the 24 hours tomorrow. Wish me luck! P.S. I also found that with my KitchenAid mixer I couldn't mix it at its highest speed as all the dough started flying out! So, I did only mix it for 10 minutes on level 5….

Love the sourdough videos, you have inspired me to start my own starter! I'm just wondering if you would recommend this bread to some one with a slight intolerance to gliten?!

Sour dough is my favorite! My MIL taught me how to make it when I was dating my husband. I also use a grinder, but I only do half fresh ground wheat and 1/2 store bought so that it comes out fluffy. I've always wanted to try and make this in my cast iron too! Have you tried that yet?

Have you considered weighing your water and flour ingredients to make for a more repeatable recipe?

you mention in a different video that when working with the starter, you don't use metal utensils. I have a mixer, but the bowl is metal. is this safe to use when kneeding the dough with the starter???

I was kinda worried about doing sourdough bread because I’ve seen recipes that are 20 steps long! This breaks it down so easily. Make bread one morning, separate it the next morning, bake it that evening. Easy peasy! Thanks for this video Lis!
