If you're using Frozen pigeon peas would you treat them the same as if they were in the can? Meaning cooking time?

Does that kind of spoon you use to stir have a specific name?

Chris, thanks for the video. Although I have been making this for decades, it's always good to look at your videos. When I use fresh pigeon peas, I stew them first and then add them in when I am about to put in the rice. I always put pumpkin in it and, of course, the boiled pigtails, depending on my guests.

Can I use brown turbinado sugar instead of soft brown sugar?

Just put the chicken in the refrigerator to marinate. I lived in Trinidad for a year and have not made Pelau in years. As for Mr. Goudas products, unless you live in Canada you will not be able to order his products. The company is in Toronto, Ontario Canada. I am lucky to have a niece who lives in Toronto so when I go home from Virginia to Ontario I will ask her to order me some products and ship it to my sister's home in Eastern Ontario.

It came out great but I lost some rice stuck to the pot. Should I have stirred more? Less heat?

Made this for the first time ever tonight. Thought I had coconut milk but I was out. Substituted half and half for it and it was amazing! My whole family loved it! Thanks for the delicious recipe and the great instructions. Will be making again!!
